If you love pancakes, but want a lighter version, look no further than these healthy Paleo pancakes. They’re simple to whip up and you can even get the kids involved with making the batter.
INGREDIENTS
1 banana, mashed
3 eggs
1/4 cup almond flour
1 tablespoon almond butter
1 teaspoon vanilla extract
1 pinch baking soda
1 pinch baking powder
Olive oil
METHOD
1 Using a large bowl, mix together the banana, eggs, almond flour, almond butter, vanilla extract, baking soda and baking powder until batter is smooh.
2 Heat a medium-sized frying pan over medium heat and add the olive oil. Drop large spoonfuls of batter into the pan and cook for around 3 minutes on each side.
3 Serve immediately with fresh berries and maple syrup.
